I use Subversion here.
CVS is a bit old and clunky, plus the Windows version of the CVS tools (like TortoiseCVS) don't appear to be updated very frequently and don't work at all in Vista.
We use CVS in the office and it's a major PITA compared to Subversion.
git looks interesting, but again, support on Windows is pretty lacking still (or was the last time I looked).
I have a subscription with a Subverison hosting company for my closed source stuff (http://www.cvsdude.com - ignore the name, they do CVS and Subversion), and for my Open Source stuff I use Subversion with Google Code (http://code.google.com) which offers free hosting for Open Source projects.
