Ubuntu is the "easiest" to get into IMO (although not always the "nicest/best" depending on what you want to do with it, but for most stuff its great)
+yes it does work with USB keyboards (be a bit stoopid if it dint) You had either plugged it in AFTER bios had initialised or you have an old one and dont have legacy enabled like xlsior said
