Impossible Mission (C64)
Flashback (Amiga)
Both of those platformers initially made me go "wow" with the graphics and after the first 10 minutes of visual delight I was hooked inside the gameplay.
I'd say the blending of action/adventure and the puzzle element was the key to those two games.
I'm not sure you could call it a platformer (perhaps isometric platformer), then syndicate (Amiga) was superb.
The best shooter platformer was Turrican II (Amiga) but I think with that one I just loved the music.
*edit* other platformers that hooked me were Shadow of the Beast (Amiga) and Myth (Amiga) - Myth just had excellent atmosphere about it, a unique item you can't just give a game.
