I recalled doing that with Wave-Race64 Dampes, was able to play the game just using the Z-button and the joystick, problem I came across was that the joystick had too much spring tension in it to easily maneuver it without tilting the controller while holding it only with your left hand.

At least they're using the GameCube style joystick with that "8-direction-lock" (for lack of a better term) setup I quite like, just hope it's easy to be precise using just one hand, at least it looks to be so with the ergonomic design the nunchaku currently holds.
