Yeah, that looks fun. Maybe the cartridge loader can be replaced with a DVD Burner, possibly? Not too sure if that would fit, tho. Needless to say, I could just hack an XBox and get almost the same result, after all, an XBox IS a computer in disguise, after all... Same hardware technology, with the right hacking and software, an XBox can become a Win XP PC.
I'd much rather take an old PSX that I got, and try to do the same thing, the CD-ROM that the PSX has can easily be used as a computer CD-ROM without too much difficulty. Just mod the insides, gut the PSX, and use the motherboard for an AMD 64 3500+, 1 GB RAM, 80 - 160 GB HDD, Windows Vista or Mac OS X Tiger (assuming that Apple launches a version of that for x86), and I can use a PSX as a Macintosh of sorts. Maybe go for a graphics card that'll actually fit in a PSX (know of any sound or graphics cards that'll fit?). That just gives me too many good ideas, knowing the way I was talking of late.
