If you dont know how to power-boost, do a hop, hold down hop-button, then rapidly hit left/right/left/right to build up yer boost power, when it hits max power (2nd color), let go of hop button for boost, to be good like the guys online you pretty much have to do that all the time, along with taking advantage of level-design flaws.
