I'm reading the Game Programming Gems series (I own series 1, 2, and 4). There is just so much good stuff in those books, including fascinating AI articles, rendering techniques, collision detection, physics engines, sun flare effects, cartoon shader effects, water simulation, splines, useful game programming techniques, etc., etc.
I just can't name it all, but if there's something about game programming to know, chances are they're in there. The "Game Programming Gems" series isn't so much about the low level API programming that most books teach, but the actual theorey, and how to apply it to your game.
The Game Programming Gems series is written by many knowledgable game programmers from companies like ATI, nVidia, Microsoft, LucasArts, Electronic Arts, Nintendo, etc., but edited to keep a consistent style.
