@Len: Thanks, the more I look into SLI the more i'm inclined to agree with you.
@Flameduck: Thanks for the advise on water cooling and I shall definately do more research before plummeting for it. On ATI the last I looked (November) the 7800GT outperformed the top ATI card and was significantly cheaper (with the GTX putting ATI very completely to shame), and as a former techie for a wholesaler I have to say the return rate on ATI is nigh on ludicrous - with two cards in the system and the intention to overclock (because I can) I really would preffer nVidia, who have the benefit of overclocking built into the drivers (and the motherboard I intend to buy - Asus A8N-SLI SE).
