Unfortunately I don't know of any games out there which have gameplay like this which I can look at to get ideas for what works and what doesn't. Does anyone know of any?

I know this next statement is like "teaching granny to suck eggs" BUT should you not get the mechanic sorted before you worry about art and music? Personally I'd brainstorm the thing to death then create a proof-of-concept, IF it works i'd move forward. Don't you agree Grey ;)
