As I have the full version installed (and have since it first became available) I'm afraid I dont know *how* to overcome the timeout on the demo, only Rob could advise you there.
Of course, the reason demos are time-limited is to encourage people to get the full version, but if it it *incorrectly* telling you the time limit is up then I am sure Rob will be able to help you.
